Lemon Meringue

Bestandele:

  • 2 x pakkies tennisbeskuitjies (gekrummel)
  • 250g botter (gesmelt)
  • 2 x blikkies kondensmelk
  • 200ml x vars suurlemoensap (ongeveer die sap van 3 x vars suurlemoene)
  • 5 x eiers (wit en geel geskei)
  • 1 x koppie strooisuiker

Metode:

  • Oond op 160ºC, oondrak in die middel
  • Krummel die koekies en meng met die botter in die tertbak
  • Druk die kors vas in die tertbak
  • Meng die kondensmelk, suurlemoensap en eiergele tot romerig
  • Gooi die mengsel oor die kors
  • Klits die eierwitte en die strooisuiker saam tot dik en blink
  • Skep oor die tertvulsel en gebruik ‘n platmes om die tertkors en vulsel heeltemal te bedek (probeer dat daar nie krummels in die meringue vermeng raak nie)
  • Gebruik die agterkant van ‘n eetlepel en druk liggies op die oppervlakte om krulpunte te vorm
  • Bak vir 30min op 160ºC

Wenke:

  • Gebruik ekstra groot organise eiers
  • Moenie dadelik al die suurlemoensap gebruik nie, voeg eers net so 160ml by en dan die res totdat dit vir jou suur genoeg is na smaak
  • Jy sal weet die eierwitte en strooisuiker is reg geklits as jy die agterkant van ‘n lepel op die mengsel druk en dit vorm ‘n krulpunt wat nie plat val nie
  • Vee die rante van die tertbak af voordat jy dit bak anders brand dit donkerbruin
  • Plaas die tertbak in ‘n plat oondplaat/pan – dis net makliker om te hanteer – anders kraak jy die meringue as jy dit uit die oond haal
  • Hou die tert buite (al bak jy dit die vorige dag), die meringue vorm druppels as jy dit in die yskas bere

Peppermint Creams & Fondants

Ingredients:

  • 2 cups icing sugar
  • third cup condensed milk
  • pinch of salt
  • peppermint essence
  • dates
  • almonds

Method

  • Mix half icing sugar and milk with teaspoon peppermint essence and a few drops of green colouring into a firm paste
  • Take about a teaspoon of paste, roll in hands into little balls, put onto greased paper and press each ball with fork making it flat
  • Leave to set
  • With remainder of ingredients make into paste, following previous instructions
  • When formed into balls press into them dates or almonds
  • Leave to set
  • No cooking needed

Fudge

Ingredients

  • 3 cups sugar to 1 tin condensed milk
  • ¼ lb.(125 g) butter
  • Fill condensed milk tin a third with water to rinse it out. Stir the water to rinse out properly
  • Vanilla essence

Method

  • Bring all ingredients gradually to the boil, stirring occasionally
  • When boiling fast keep stirring all the while to prevent burning
  • This takes about ¾ hour
  • When fudge gets to a shiny stage or just leaves sides and bottom of pot when tipped on side, remove from heat and beat well
  • Put into greased pan to set and cut into squares
  • If cooked too long fudge will get sugary

Coconut Ice

This recipe comes from my husband’s grandmother, who is 97 years old. Unfortunately she is blind and cannot make the recipe herself anymore, but up to about 3 years ago she always made Coconut Ice, Fudge and Peppermint Creams (recipes also available on Bakersfriend) for the family at Easter Time.

Ingredients

  • 2 cups of coconut
  • 2 lbs. (4 cups) sugar
  • 1 cup water

Method

  • Boil together sugar and water for approximately 7 minutes until it forms a thread when taken out on fork
  • Remove from heat and mix in coconut
  • Put half mixture into greased pan
  • Add a little pink colouring to remaining mixture
  • Pour on top of white and let set
  • Cut into squares when cooling

Sponge layer cake

Ingredients

  • 1 cup of flour
  • 1 cup of sugar
  • 1 tablespoon butter
  • 3 extra large eggs
  • 3 tablespoons boiling hot full cream milk
  • ½ teaspoon vanilla essence
  • 1 rounded teaspoon baking powder

Method:

  • Sift flour and baking powder together
  • Whip whites of eggs stiffly then gradually beat in the sugar
  • Add yolks of eggs and vanilla essence
  • Melt butter in the hot milk, then add flour, butter and milk mixture alternately to egg whites and sugar mixture
  • Bake in two layer pans for about 18 to 20 minutes in 375° oven

Pampoenkoekies

Bestandele

  • 2 koppies pampoen
  • 1 koppie koekmeelblom
  • 1 teelepel bakpoeier
  • 2 eetlepels suiker
  • knippie sout
  • 1 eier
  • bietjie melk
  • pypkaneel en suiker

Metode:

  • Kook pampoen tot sag en laat staan tot koud
  • Meng al die ander bestandele saam en voeg bietjie melk by
  • Voeg pampoen by die mengsel
  • Bak in olie
  • Gooi pypkaneel en suiker bo-oor

Christmas Cake

Ingredients:

  • 1kg fruitmix (I use 750g fruit mix and 250g mixed peel)
  • 500g dates, pitted and chopped up
  • 1½ teaspoons bicarbonate of soda
  • 1 cup yellow or brown sugar
  • 250g butter
  • 1 cup boiled water
  • Optional: Add 2 tots of brandy to the mixture

Method:

  • Mix all the above ingredients in a big pot
  • Bring to boil and simmer for 10 minutes
  • Leave overnight

Next day:
Add the following to first mixture:

  • 200g cherries, chopped and rolled in flour. It is important to roll the cherries in flour otherwise all the cherries will end up at the bottom of the cake once baked
  • 3 cups flour
  • 3 extra large eggs
  • 2½ teaspoons baking powder

Method

  • Use a square size baking tin (20cm x 20cm)
  • Layer the baking tin with 3 layers of heavy duty foil. Put butter on the last layer of foil, before the next step
  • Using brown paper, add 3 layers. Put butter on the last layer of brown paper
  • Add mixture to baking tin and bake at 180° for 1 hour uncovered
  • After 1 hour, turn oven to 110° and cover cake with 3 layers of heavy duty foil on top
  • Continue baking for 2½
  • Leave in tin to cool down
  • Wrap in foil and add 2 tots of brandy occasionally

Pepperminttert

Bestandele:

  • 1 blik gekondenseerde melk (Karamel kondensmelk)
  • 2 pakkies Orley Whip (styf geklop)
  • 5 peppermint crisps (fyn gerasper)
  • 3 pakkies tennis beskuitjies

Metode:

  • Meng gekondenseerde melk, Orley whip en peppermint crisps saam
  • Pak in lae met tennis beskuitjies
  • Gooi van die gerasperde peppermint crisps bo-op
  • Vries vir 1 uur

Quick apple pie

Ingredients

  • 125g margarine (I use stork bake)
  • 2 eggs
  • ¾ cup of sugar
  • 1 cup self raising flour
  • Tin of apples
  • Cinnamon and sugar

Method

  • Melt margarine
  • Remove from heat and beat in the eggs
  • Add sugar and mix
  • Add self raising flour and mix
  • Pour into a greased pie dish
  • Add apples on top of the mixture
  • Bake for almost 1 hour at 180°
  • Sprinkle lavishly with cinnamon and sugar as soon as you take it out of the oven
  • Serve and enjoy

Gingerbread people

Great fun for the kids.

Ingredients

  • 350g cake flour
  • 1 level teaspoon bicarbonate of soda
  • 2 lever teaspoons ground ginger
  • 120g butter
  • 170g soft brown sugar
  • 4 tbsp golden syrup
  • 1 egg, beaten

Method

  • Sift the flour, bicarbonate of soda and ginger together
  • Rub in the butter
  • Add the sugar and mix well
  • Warm the golden syrup slightly and stir into the mixture with the egg to make a pliable dough – add a little milk if the mixture is too dry
  • Knead untill smooth and roll out onto a floured surface
  • Cut out your shapes and place onto a greased baking sheet, keeping shapes well apart. If you want to make currant eyes add them now
  • Bake at 190° for around 10 minutes
  • Once baked, cool on the rack before decorating
